I recently returned to Edinburgh (I used to live in Scotland) and rediscovered this city. I went with a group of three other friends and stayed right along the Royal Mile (in the off season there are apartment rentals along the Mile for L325-450/week). As for things to do around the city, of course, the Castle and the Palace (anchors of the Royal Mile). Along the Royal Mile are the Camera Obscura, St Giles Cathedral, the Real Mary King's Close, and many other place. Additionally there is the Museum of Scotland. Want a nice hike to a magnificent view? Hike up the 800+ feet to the highest point in Edinburgh, Arthur's Seat. A nice hike, but best done in the daylight, the view is better, as it the return down the slopes can be a bit hard to find. For live music look around the many bars and pubs, but the area around the Grassmarket seem to have the highest concentrations. All in all, our group had a wonderful time during our 7 day fall trip (November), even if the nights come too early. Also consider the 45 min train ride to Glasgow to experience the other side of the country.
