The former mansion of a Turkish pasha (who built a wing for each of his four wives), this hotel opened in 1881 and is the oldest in Jerusalem and a member of the Relais and Chateau Association. The European-run hotel prides itself on its political neutrality and its non-Kosher food (bacon is available for breakfast). It is popular with journalists, archaeologists, foreign aid workers and those who have come to do business. Its luxurious rooms reflect a bygone era the grounds are dotted with fairytale-like spots to relax like a lush garden with flowers and butterflies and a tiled courtyard with fountains.
